Chicken of the Woods COVID Mask?


Nah, truth is I do not have a COVID mask made out of Chicken of the Woods mushrooms but I have been eating a lot of them lately. 


Chicken of the Woods is a type of mushroom that is very easy to distinguish. It has an impressive size and vibrant yellow-orange colors and grows at the base of living and dead trees. This delectable treat has  a lemony, meaty taste, remarkably similar to the taste and texture of chicken, (without the weird bits) hence its name. 


Benefits of Chicken of the Woods:

  • Antioxidants, helping to boost your immune system

  • High amounts of protein, about  14g of protein per 100g of mushroom

  • Cholesterol free

  • Good source of fiber

  • Packed with vitamins and minerals, including copper, potassium, magnesium and zinc

  • Also contains B vitamins, including folate which is great for expectant mothers!

*** Disclaimer - If you are pregnant and looking for a healthy meal and have never tried chicken of the woods before, first ensure you can eat it. The mushroom can have adverse effects in some people, with rare instances of allergic reactions. Simply rub some of the mushroom on the inside of your lip and wait an hour. If there’s no reaction, eat a small amount first to minimize any effects.

My favorite thing about Chicken of the Woods is the taste! It is just so delicious that you can keep your recipes super simple. This is what I used last night and it was AWESOME!!!

Magical Mushroom Protein Pasta


  • Chop mushrooms into real small pieces

  • Sauteed them in oil and garlic for about 20 minutes (adding a little bit of water as needed

  • Cook edamame pasta 

  • Toss together with a splash of balsamic and a pinch of salt and pepper
